Saperavi may not be the first word on your lips, but once you’ve tried a very good one, you won’t forget it fast. At Hugh Hamilton, it’s not a curio or a fad but a grape they have been dedicated to for over 20 years. It’s inky, as you’d expect from the teinturier grape, with a purple opaque hue in the glass. The nose is metallic with blueberry jam, blackberries and mulberry stains. A hint of cracked peppercorn and Thai basil. The palate is lively with natural acidity to bolster the fruit; it coats the palate and is altogether its own unique shape. Tannins are soft – think along the lines of slow-moving tar or syrup without the sweetness. It’s fascinating stuff and something you need to try. Drink now–2030

Karrawatta Ace of Trumps Cabernet Sauvignon 2022

A south-facing site, this opens with morello cherries in syrup, cassis and blackberries on the vine. There is the noticeable pencil box and clippings of cigar. Some meaty notes of biltong and Chinese dried plum. The palate is taut with frisky acidity; it’s more animated on the palate, some blue fruit shining through, and is a medium- bodied drink. Tannins are grainy but well integrated. A Cabernet with many facets to have you sipping and thinking and sipping again. Serve with charred Korean galbi for a night worth remembering. Drink now–2038 Karrawatta Tutelina Shiraz 2020 G 93 Tutelina is a blend of Shiraz from all three owned vineyards: 49% McLaren Vale, 43% Langhorne Creek and 8% Adelaide Hills. A selection of the very best barrels and matured for 18 months in 35% new oak. Satsuma plums, dried cherries and Chinese salted apricots. There is five spice, mace and cumin too. The palate is filled with fine tannins that suck at the sides, some grainy strawberry and leather straps. It takes you on a wild ride of unexpected fruit, a mix of spice and into a fairly creamy finish. A wine for some quiet thought and gamey meats. Drink 2027-2034 Oliver’s Taranga Fiano 2025 G 93 Glacé fruits of peach, pineapple and apple blossoms. Lemon sorbet and a distinct appletini-like aroma. Some acacia and tea rose. A chewy mouthfeel with fruit high and a snake tail of pithy phenolics. Juicy, fragrant and finishing dry, but with notes of steeped lemon slices. All the attractiveness of Fiano is here. Great value, hard not to love. Drink now–2027
